原料:猪肉丸、牛肉丸、鱼肉丸各350克,大白菜300克,猪肚220克,基围虾200克,熟鹌鹑蛋180克,肉末120克,鸡蛋100克,平菇90克,菜心、冬笋、水发木耳各适量

1 肉末装碗,加1克盐、1克鸡粉,加水淀粉拌至起劲;鸡蛋打入碗中,制成蛋液;鹌鹑蛋加生抽拌匀。

3 沸水锅中加3毫升生抽、1克鸡粉、盐、料酒、猪肚,煮熟;鹌鹑蛋滑油;剩余未处理食材、蛋卷、猪肚改刀。

4 沸水锅中加1克盐、少许油,先后将大白菜、平菇、木耳、菜心、冬笋鱼肉丸、猪肉丸、牛肉丸汆水捞出。

5 最后将基围虾焯水捞出;取砂锅,放入大白菜摆好,放上余下食材,摆放整齐。

6 起油锅,加上汤煮沸,加入鸡粉、盐、生抽、胡椒粉,拌匀调味,制成汤料,盛入砂锅即可。
烹饪小提示
砂锅中最好先抹上少许食用油,再放入处理好的食材,这样炖时才不易粘锅。
